Dondero's Restaurant Revamped to Casual Bistro Dining
Grand Hyatt Kauai Resort & Spa’s Dondero’s restaurant has launched a new menu and a new style
POIPU, KAUAI – February 21, 2014 – Grand Hyatt Kauai Resort & Spa’s Dondero’s restaurant has launched a new menu and a new style. Having been a fine dining establishment since opening 23 years ago it is now host to casual dining, bistro café style.
Gone are the waiters in formal shirts and vests and a table exquisitely laid with every possible silverware and wine glass one might need, now diners are greeted with servers in classic Italian attire and an overall informal feel throughout. The menu was revamped featuring many classic entrees and fresh, creative appetizers, salads, pizza and pasta plates.
“We really saw the need for a more casual, approachable restaurant concept with reasonable pricing,” stated Andres Alvarez, manager. “There is still the feeling of being in a grand villa with floor to ceiling windows offering resort and ocean views but it’s all more approachable and comfortable now.”
Though a less formal ambiance and laid back atmosphere welcomes guests, the menu is still sure to please. With a few menu items carrying over, diners will find appetizers like the favorite calamari fritti and the fresh ahi tuna carpaccio; salads feature fresh greens and delicate flavor combinations. Neapolitan style pizzas are a new item. Pastas range from Molokai purple sweet potato ravioli subtly flavored in a sage brown butter with toasted macadamia nuts and goat cheese to a traditional pasta Bolognese; mains include Dondero’s famed osso bucco, brick seared jidori chicken or grilled locally-caught fish. Dinner is capped with house made gelatos and sorbets, classic tiramisu or one-of-a-kind lilikoi braised pineapple crostata. “I sought to craft a menu featuring classic Italian favorites using herbs from our garden with a fresh creative twist. Simply good food in good sized portions at a reasonable cost” said Chef de Cuisine, Alex Gutierrez. The new menu offers numerous vegetarian and gluten-free options for those on limited diets.
